Fragrant lemon-mint asparagus - a versatile dish perfect as a side or tossed into a refreshing pasta salad.
Ingredients:
  • 1 pound fresh asparagus, trimmed and cut into 3-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh mint
  • 0.5 lemon
  • salt and freshly ground black pepper to taste
Instructions:
  • In a large, shallow pan over medium heat, heat olive oil until hot. Spread asparagus evenly in the pan. Cook for 2 to 3 minutes, then stir occasionally. Keep cooking until asparagus is bright green and tender, for about 6 to 8 minutes.
  • Add fresh mint leaves to the dish, allowing them to infuse for a quick 30 seconds before taking it off the heat. Finish by generously squeezing fresh lemon juice over the asparagus and season with salt and pepper to enhance the flavors.
