Zesty Moroccan chicken with refreshing orange and mint for a flavorful weeknight meal.
Ingredients:
  • 1 red chilli, seeds removed, finely chopped
  • 1 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 1 lemon, juiced
  • 5.00 gm ground cinnamon
  • 7.50 gm ground cumin
  • 54.40 gm sultanas
  • 80.00 ml pine nuts
  • 40ml (2 tbsp) olive oil
  • 800g chicken fillets, cut into thin strips
  • 1 orange, halved, sliced
  • 80.00 ml freshly chopped mint
Instructions:
  • In a bowl, combine chilli, chilli flakes, garlic, lemon juice, cinnamon, cumin, sultanas, pine nuts, half of the olive oil, and 1 teaspoon salt, mixing well. Add the chicken, then refrigerate for 30 minutes.
  • In a large frypan, heat the remaining olive oil. Cook chicken pieces on one side until golden, around 1-2 minutes. Flip the chicken over, add orange slices, and cook for 2-3 minutes until fully cooked. Mix in mint and serve with couscous and a dollop of low-fat yogurt.
