Crispy cracker-crusted pan-fried Dover sole: a fast, crowd-pleasing weeknight dinner!
Ingredients:
  • 1 cup crushed saltine crackers
  • 1 pound Dover sole
  • 0.25 cup all-purpose flour
  • 2 tablespoons vegetable oil, or more as needed
  • 1 pinch fresh dill, or to taste
  • salt to taste
Instructions:
  • Crush crackers and spread them on a plate. Pour eggs into a shallow dish.
  • In a 1-gallon resealable plastic bag, coat the fish evenly by gently shaking with flour.
  • Warm up a generous amount of oil in a spacious nonstick skillet over medium-high heat.
  • Coat each piece of fish in egg after the flour, letting extra drip off, then coat well with cracker crumbs.
  • Cook fish in sizzling oil until golden and flaky, about 5 minutes per side. Sprinkle with aromatic dill and a pinch of salt.
