Whip up a quick and nutritious brown rice veggie salad in 10 minutes!
Ingredients:
  • 185g (1 cup) cooked brown rice
  • 150g (1 cup) rinsed, drained no-added-salt red kidney beans
  • 2 green shallots, white part only, thinly sliced
  • 120g (1 1/2 cups) shredded red cabbage
  • 1 carrot, coarsely grated
  • 100g sugar snap peas, sliced
  • 20.00 ml salt-reduced tamari
  • 2 tsp mirin
  • 1 tsp sesame oil
  • 1.50 gm sesame seeds
Instructions:
  • In a large bowl, toss together the rice, kidney beans, shallot, cabbage, carrot, and sugar snap peas.
  • Mix the tamari, mirin, and sesame oil in a small jug, then drizzle over the salad and toss well. Finish by sprinkling sesame seeds on top.
