Quick and easy fried rice with tasty prawns, bacon, and veggies.
Ingredients:
  • olive oil cooking spray
  • 380g brown rice
  • 4 eggs, lightly beaten
  • 125g packet 97% fat-free bacon, chopped
  • 1/2 tsp sesame oil
  • 4 green onions, sliced
  • 500g cooked prawns, peeled, halved
  • 250.00 ml frozen peas
  • 250.00 ml beansprouts, trimmed
  • 42.00 gm light reduced-salt soy sauce
Instructions:
  • Boil rice in a saucepan of salted water for 30 to 35 minutes until tender. Drain, rinse with cold water, and set aside.
  • 1. Preheat a wok over medium-high heat and lightly coat it with oil. 2. Pour in half of the beaten egg, swirl to evenly coat the wok, and cook for about a minute until it's just set. 3. Transfer the cooked egg to a cutting board, roll it up, and let it stand for 1 minute. 4. Repeat the process with the remaining egg, then thinly slice before serving.
  • Turn the stovetop to high heat. Coat a wok with oil and cook the bacon until golden, about 3 to 4 minutes. Next, add more oil, onions, prawns, and peas and stir-fry for 1 minute. Toss in the rice and stir-fry for 3 minutes until heated. Finally, add egg, sprouts, and soy sauce, stir-frying until well combined. Serve and enjoy!
