Elevate your fried rice by combining pork, cooked rice, spring onions, garden peas, and curry paste for an irresistible Chinese-inspired dish.
Ingredients:
  • 1 tablespoon Chinese rice wine, or more to taste
  • 1 teaspoon soy sauce
  • 1 teaspoon cornstarch
  • 5 ounces pork fillet, thinly sliced
  • 2 tablespoons peanut oil
  • 0.5 onion, diced
  • 2 teaspoons curry powder
  • 0.25 teaspoon water
  • 1 spring onion, or more to taste, sliced
  • 1.75 cups cold cooked rice
  • 0.75 cup green peas
Instructions:
  • Combine the rice wine, soy sauce, and cornstarch in a bowl, then mix in the pork until evenly coated.
  • Heat a wok or deep saucepan over medium-high heat and add peanut oil. Brown pork in batches for 2 to 3 minutes per batch. Transfer to a plate with a slotted spoon. Cook onion in the remaining oil until softened for 2 to 3 minutes.
  • Combine the curry powder and water in a bowl until a smooth paste forms.
  • Combine curry paste, spring onion, and salt in the wok. Mix in rice, ensuring there are no lumps. Toss in peas. Add back the pork to the wok and cook until everything is heated through, about 4 to 5 minutes.
