Easily whip up delicious Pork Fried Rice using frozen veggies and rice straight from the freezer for a convenient year-round meal.
Ingredients:
  • 3 cups cooked rice, fresh or frozen
  • 10 ounces lean pork loin, diced into 1/2-inch cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil, divided
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 2 inches fresh ginger, minced or grated
  • 1 cup frozen carrots and peas
  • 3 large eggs, scrambled
  • 1 tablespoon soy sauce
  • For the Chili Sesame Oil (Dad Add):
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon chili oil
  • 1/4 teaspoon red pepper flakes
  • Pinch of sesame seeds
Instructions:
  • For freshly-cooked rice, spread it on a baking sheet to cool for 10-15 minutes or chill in the fridge for a faster cool down. For frozen rice, thaw slightly to separate the grains.
  • Sear the pork: In a heated large skillet or wok with a tablespoon of oil, season pork cubes with salt and pepper, then cook until pork is cooked through in 3-4 minutes. Remove from skillet.
  • Sauté the aromatics: Heat a bit more oil in the skillet, then sauté the onion, garlic, and ginger until fragrant. Add the frozen carrots and peas and cook until the onions are soft and the vegetables are heated through. Transfer from the skillet.
  • Prepare the Chili Sesame Oil by combining toasted sesame oil, chili oil, red pepper flakes, and sesame seeds in a small bowl. If desired, lightly warm the mixture in a pan over low heat for a few minutes, ensuring the spices are not burned.
  • Finish the fried rice: Heat two tablespoons of vegetable oil in the skillet over medium heat. Add rice evenly, let it fry for 1-2 minutes until slightly browned. Create a well in the center, pour in the eggs, and stir until 90% cooked. Combine rice, eggs, cooked pork, vegetables, and soy sauce. Garnish with scallions and Chili Sesame Oil if desired. Serve hot. For leftovers, refrigerate for 5-7 days or freeze for up to three months in a freezer-safe bag. Reheat in the microwave with a tablespoon of water per serving.
