Fast pork fried rice

Effortless fried rice - just chop an onion!
Ingredients:
  • 36.40 gm peanut oil
  • 1 brown onion, diced
  • 400g pork mince
  • 40.00 ml Homemade Chinese Stir-fry Sauce (see notes)
  • 24.00 gm brown sugar
  • 1000.00 ml frozen diced mixed vegetables
  • 82.50 ml Homemade Chinese Stir-fry Sauce, extra
  • 800.00 gm cold cooked long-grain white rice
  • Thinly sliced green onion, to serve
Instructions:
  • In a large frying pan over high heat, heat oil. Add garlic and onion, cook for 1 minute while stirring. Add mince and cook for 4 minutes until browned, breaking up lumps with a wooden spoon. Stir in stir-fry sauce and sugar, cook for an additional 3 minutes until mince is caramelized.
  • Toss in the vegetables and sauté for 1 minute and 30 seconds. Pour in the additional stir-fry sauce along with 3/4 cup of water. Continue cooking for 1 minute and 30 seconds, or until the sauce begins to thicken.
  • Add the rice to the pan and coat it with the sauce. Cook while tossing until the rice is heated through. Serve with a sprinkle of green onion on top.
