Savory herb rice with crispy pork chops and quick veggies makes a delicious, fast meal perfect for feeding a crowd.
Ingredients:
  • 2 cups uncooked white rice
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried chives
  • 3 cups water
  • 0.5 (16 ounce) package frozen peas and carrots
  • 0.5 (8 ounce) bag frozen corn
  • 3 tablespoons vegetable oil
  • 1 (18 ounce) package boneless pork chops, cubed
  • 0.25 cup soy sauce
Instructions:
  • In a saucepan, infuse rice with the aromatic flavors of basil, oregano, and chives. Pour in water and bring to a lively boil. Lower the heat, cover, and gently simmer until the rice is tender and has soaked up all the liquid, about 20 to 25 minutes.
  • In a microwave-safe bowl, mix together frozen peas, carrots, and corn with a drizzle of water. Cover and microwave for 6 to 7 minutes, or until heated through.
  • In a large saute pan over medium heat, sizzle the pork chops until fully cooked, about 7 to 10 minutes. Add in the cooked veggies, rice, and soy sauce, and warm everything together.
