Keto Pork and Veggie Cauliflower Fried Rice

Satisfy your takeout cravings guilt-free with this speedy keto Chinese pork fried "rice" made with cauliflower.
Ingredients:
  • 3 tablespoons sesame oil, divided
  • 1 pound boneless pork chops, sliced into thin strips
  • 4 cups fresh cauliflower rice
  • 1 cup small broccoli florets
  • 0.75 cup diced mushrooms
  • 0.5 cup diced celery
  • 3 cloves garlic, diced
  • 2 large eggs, beaten
  • 0.25 cup tamari
  • 4 green onions, chopped
Instructions:
  • In a hot wok or large skillet, sizzle 2 tablespoons of aromatic sesame oil. Swirl in pork and mix until all pieces are coated. Add in cauliflower rice, broccoli, mushrooms, celery, and garlic. Keep stirring until pork is just slightly pink at the center, about 5 to 7 minutes.
  • Create a space in the wok by pushing the pork and cauliflower mixture to one side. Pour in the beaten eggs and gently scramble them until cooked, around 2 minutes. Combine the pork and cauliflower with the scrambled egg, then add tamari, green onions, and the remaining 1 tablespoon of sesame oil. Stir everything together and continue stir-frying until heated through, another 2 minutes.
