Indulge in succulent pork loin with roasted tomatoes and creamy cheese sauce for a flavorful twist on a classic meal.
Ingredients:
  • 2 bunches broccolini, trimmed
  • 260g truss tomatoes
  • 36.40 gm olive oil
  • 4 pork loin chops
  • 25g butter
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 300mls light cooking cream
  • 125.00 ml finely grated parmesan cheese
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a baking tray with baking paper, then place broccolini and tomatoes on the tray. Drizzle with half of the oil, season with your favorite herbs and spices, and bake for 10-12 minutes until beautifully golden and tender.
  • In a large frying pan over medium-high heat, heat the remaining oil. Cook the pork for 7-8 minutes, turning occasionally, until golden and cooked through. Transfer the pork to a plate and loosely cover with foil to rest for 5 minutes before serving.
  • Return the pan to a sizzling medium-high heat and add butter and onion. Stir and cook for 2-3 minutes until the onion softens. Introduce the garlic and cook for 1 minute until aromatic. Pour in the cream and let it boil for 2-3 minutes until thickened. Sprinkle in the cheese and cook until it melts smoothly. Finally, season to taste.
  • Plate pork alongside fresh seasonal vegetables and drizzle with a luscious creamy Parmesan sauce.
