Keto breakfast pizza with egg, sausage, and pork rind crust, topped with savory gravy and cheese.
Ingredients:
  • 1 pound bulk breakfast sausage
  • 3 large eggs, divided
  • 0.33333334326744 cup crushed pork rinds
  • 2 tablespoons Italian seasoning

  • 1 cup prepared country-style gravy
  • 10 tablespoons bacon bits
  • 2 tablespoons chopped yellow onion
  • 2 tablespoons diced jalapeno pepper
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C), grease a rimmed pizza sheet, and pop a baking sheet on the bottom rack to catch any drippings.
  • Combine sausage, 1 egg, pork rinds, and Italian seasoning in a bowl until well mixed. Spread the mixture evenly into a large, thin circle on the prepared pizza sheet.
  • Bake in the oven until sausage is browned and the dish is set, about 10-15 minutes.
  • Spray a large skillet with cooking spray and heat over medium-high heat. Whisk the remaining eggs in a bowl, then pour into the skillet. Cook while stirring until the eggs are set, approximately 5 minutes. Remove from heat and set aside.
  • Remove excess grease from the pizza sheet. Place oven rack 6 inches below the broiler and preheat the broiler.
  • Evenly coat the meat "crust" with gravy. Scatter scrambled eggs on top. Sprinkle with bacon bits, onion, and jalapeno. Finish with a generous layer of Cheddar cheese on top.
  • Place the pizza in the preheated oven and broil until the cheese is gooey, bubbly, and lightly browned, which should take about 3 to 5 minutes. Allow it to cool slightly before slicing it into quarters for serving.
