Quick and filling keto breakfast with eggs and avocado for all-day energy.
Ingredients:
  • 1 medium avocado, halved and pitted
  • 0.25 cup shredded Cheddar cheese
  • salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley, or to taste
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then crack each egg into a small bowl.
  • Scoop out avocado flesh to create space for an egg. Then, place avocado halves on a baking sheet and carefully add an egg to each cavity.
  • Cook until the eggs are set, about 15-20 minutes in the preheated oven.
  • Take out of the oven and plate up. Top with rich Cheddar cheese, season with a pinch of salt and pepper, and finish with a sprinkle of fresh parsley for an extra touch of flavor.
