Quick and customizable keto pancakes with options like pecans, whipped cream, and blueberry jam.
Ingredients:
  • 2 ounces cream cheese, softened
  • 1 teaspoon white sugar
  • 0.5 teaspoon ground cinnamon
  • cooking spray
Instructions:
  • In a blender, mix cream cheese, eggs, sugar, and cinnamon until velvety. Allow to sit for 2 minutes or gently tap on counter to eliminate bubbles.
  • Preheat a skillet over medium heat and lightly coat it with cooking spray. Pour 1/4 of the batter into the skillet and cook until bubbles appear on the surface, approximately 2 minutes. Flip and cook for another minute or until done. Transfer to a plate and continue with the rest of the batter.
