Try these delicious low-carb cheesy spinach squares for a satisfying breakfast on your keto diet.
Ingredients:
  • 4 tablespoons salted butter
  • 3 large eggs
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 pinch ground nutmeg
  • salt to taste
  • 1 cup almond milk
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 (16 ounce) package shredded Monterey Jack cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and melt butter in a 9x13-inch baking pan while heating.
  • In a medium bowl, vigorously beat the eggs. In a separate bowl, mix the flour, baking powder, nutmeg, and salt.
  • Alternate adding the flour mixture and almond milk to the eggs, then stir in the spinach and Monterey Jack cheese. Pour the batter into the melted butter in the baking pan.
  • Bake in the oven until firm, about 35 to 40 minutes.
  • Let it cool at room temperature for 45 minutes before slicing into 10 squares.
