Prep in advance these easy 3-ingredient egg cups for a quick keto-friendly breakfast on-the-go.
Ingredients:
  • 6 slices bacon
  • nonstick cooking spray
  • 0.5 cup shredded sharp Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and elegantly line a large rimmed baking sheet with foil.
  • Lay out the bacon slices on the baking sheet.
  • Lay bacon in the oven and bake until slightly cooked but still flexible, for about 8 minutes. Take it out, lower the oven temperature to 350 degrees F (180 degrees C), and allow the bacon to cool to touch.
  • Coat the muffin pan with cooking spray in all 6 cups.
  • In a medium bowl, vigorously whisk eggs until well combined. Line each muffin cup with a slice of bacon wrapping it around the inside. Divide Cheddar cheese evenly among the 6 muffin cups and pour the beaten egg on top of each.
  • Bake in the oven for 13-15 minutes until the eggs are cooked.
