Wholesome brown rice kale salad with veggies and almonds is a perfect meal or steak side.
Ingredients:
  • 4 cups vegetable broth
  • 2 cups brown rice
  • 0.5 cup diced onion
  • 0.5 cup diced celery
  • 0.5 cup diced carrot
  • 0.25 cup chopped almonds
  • 0.5 cup diced mushrooms
  • salt to taste
  • 2 cups chopped kale
Instructions:
  • In a saucepan, bring the broth and brown rice to a boil. Cover, reduce heat to medium-low, and simmer for 45 to 50 minutes until the rice is tender and the liquid is absorbed.
  • In a large saucepan over medium heat, melt butter until sizzling. Sauté onion, celery, carrot, and almonds until onion starts to soften, about 5-10 minutes. Stir in mushrooms and cook for an additional minute. Season with salt to taste.
  • Combine the cooked rice with the onion mixture, ensuring an even mix. Then, incorporate the kale and cook until it's completely wilted, typically around 5 minutes. Serve the dish warm.
