Sesame chicken and brown rice salad bowl

Try this speedy sesame chicken and brown rice bowl for a delicious meal in no time!
Ingredients:
  • 24.00 gm sesame seeds
  • 900g Chicken Breast Fillets, cut in half horizontally
  • 18.20 gm olive oil
  • 48.00 gm tahini
  • Juice and zest of 1 lemon
  • 600.00 gm cooked brown rice
  • 1/4 bunch kale, finely shredded
  • 1 cucumber, cut into ribbons
  • 1 avocado, thinly sliced
  • 250.00 ml sprouts, of choice
  • 62.50 ml pickled ginger
  • 62.50 ml almonds
Instructions:
  • Heat a large non-stick pan over medium heat.
  • - Spread sesame seeds on a large plate and press chicken into seeds, then season generously with salt and pepper. - Heat oil in a pan and cook chicken for 3 to 4 minutes per side until fully cooked. - Rest the chicken on a foil-covered plate for 5 minutes before slicing thinly.
  • In a small bowl, whisk together tahini, lemon zest, lemon juice, and 1/4 cup water until silky and thick. Season with salt and pepper to taste.
  • Mix together rice, kale, cucumber, avocado, and sprouts in a large bowl. Add chicken, pickled ginger, and almonds on top. Lastly, drizzle dressing over the salad before serving.
