Affordable and flavorful rice side dish.
Ingredients:
  • 300.00 gm brown rice
  • 125.00 ml macadamia nuts, toasted, chopped
  • 2 green onions, thinly sliced
  • 3 celery stalks, trimmed, thinly sliced
  • 1 large red delicious apple, cored, cut into 1cm cubes
  • 125.00 ml plain yoghurt
  • 125.00 gm mango chutney
  • 21.00 gm lemon juice
Instructions:
  • In a large saucepan, cook rice in boiling salted water according to package instructions until just tender. Then, drain the rice, rinse under cold water, and let cool for 10 minutes.
  • In a bowl, mix together rice, macadamias, onion, celery, and apple. In another bowl, combine yoghurt, chutney, and lemon juice. Season with salt and pepper. Pour yoghurt mixture over rice mixture and toss to coat everything evenly. Serve and enjoy!
