Brown Rice and Lentils

Delicious rice and lentil side dish.
Ingredients:
  • 1 small onion, chopped (1/4 cup)
  • 1 clove garlic, finely chopped
  • 1/2 cup dried lentils (4 oz), sorted and rinsed
  • 1/2 cup uncooked brown rice
  • 1 can (14 oz) vegetable or chicken broth
  • 1/4 cup water
  • 1/4 teaspoon red pepper sauce
  • 1 medium green bell pepper, coarsely chopped (1 cup)
  • 1/2 cup shredded mozzarella cheese (2 oz)
Instructions:
  • In a 2-quart saucepan, melt butter over medium heat. Sauté onion and garlic in the butter for about 3 minutes until the onion is tender, stirring occasionally.
  • Combine lentils, rice, broth, water, and pepper sauce in a pot. Bring to a boil, then lower heat and simmer covered for about 50 minutes. Add more water if needed until rice is tender and liquid is absorbed.
  • Add the bell pepper and generously top with cheese.
