Delicious 10-minute golden haloumi and brown rice salad with capsicum, currants, hazelnuts, and spinach - ideal for any meal!
Ingredients:
  • 450g packet microwave brown rice
  • 1/2 red onion
  • 55g (1/3 cup) currants
  • 1 lemon
  • 260g packet pre-sliced haloumi
  • 55g (1/2 cup) roasted hazelnuts
  • 1/2 bunch fresh mint
  • 150g bought chargrilled capsicum
  • 100g baby spinach leaves
  • Extra virgin olive oil, to drizzle
Instructions:
  • Preheat a non-stick frying pan over medium-high heat.
  • Prepare the rice according to the instructions on the package.
  • Thinly slice the onion using a mandolin and place it in a bowl. Drizzle lemon juice over the onion, add currants, and stir to combine. Season to taste and let it sit, stirring occasionally, to pickle.
  • Place the haloumi in the hot frying pan and sear for 1-2 minutes per side until beautifully golden. Then, transfer it to a plate.
  • Roughly chop the hazelnuts and place them in a large mixing bowl. Slice the capsicum into thin strips and add to the bowl along with the spinach. Coarsely chop the mint and mix it in.
  • Combine the rice and onion with the spinach mixture, then transfer to a platter. Top with haloumi and drizzle with oil before serving.
