Delicious fried rice salad - perfect for all ages, bursting with flavor and nutritious ingredients.
Ingredients:
  • 20.00 ml sesame oil
  • 1 onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 1 green capsicum, seeded, finely chopped
  • 2 rashers shortcut rindless bacon, finely chopped
  • 800.00 gm cooked brown rice
  • 125g can corn kernels, drained
  • 6 green onions (shallots), thinly sliced
  • 65.63 gm light soy sauce
  • 67.50 gm hoisin sauce
  • Cherry tomatoes, halved, to serve
  • Coriander, leaves, to serve
Instructions:
  • In a large frying pan or wok over high heat, sauté onion, capsicum, and bacon in hot oil for 3-4 minutes.
  • Combine the rice, corn, green onions, and sauces in the pan. Stir-fry for 2-3 minutes until well mixed and aromatic. Transfer the flavorful mixture to a bowl and allow it to cool.
  • Transfer the salad into a container and layer with halved cherry tomatoes and fresh coriander leaves. Refrigerate until ready to enjoy.
