Brown Sugar Pecan Refrigerator Cookies

Prepare dough in advance for fresh, warm cookies in minutes.
Ingredients:
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 cup chopped pecans
Instructions:
  • Using an electric mixer, cream the brown sugar and butter in a large bowl until smooth. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, combine flour, baking powder, and salt. Gently fold the flour mixture into the butter mixture until just incorporated. Stir in the pecans until evenly distributed.
  • Roll the dough into a log, then wrap it in wax paper and chill in the refrigerator for a minimum of one hour.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and slice the dough, then elegantly arrange the cookies on a baking sheet.
  • Bake until edges turn golden, approximately 12 minutes. Let cookies cool on baking sheet for 1 minute before transferring to wire rack to cool completely.
