Bruschetta recipe

Elevate bruschetta with spicy chili and fragrant basil - ideal for any occasion!
Ingredients:
  • 4 vine-ripened tomatoes, finely chopped
  • 20.00 ml finely chopped red onion
  • 40.00 ml finely chopped basil
  • 1 long red chilli, seeded, finely chopped (optional)
  • 60ml olive oil
  • 8 x 1cm-thick slices Pane di Casa bread
  • 1 garlic clove, extra, halved
  • Basil leaves, to serve
Instructions:
  • In a bowl, combine tomato, crushed garlic, onion, chopped basil, chili, and 1 tbsp of oil. Season and mix well. Let it marinate for 15 minutes.
  • Heat up the barbecue grill or chargrill on medium-high heat. Brush both sides of the bread with the remaining oil and grill for 2-3 minutes on each side until nicely toasted.
  • Take the cut side of the garlic halves and rub them over one side of the toast. Add the tomato mixture and basil leaves on top. Serve promptly.
