BBQ salmon bruschetta with sauce recipe

BBQ salmon bruschetta: a tasty main dish or snack, quick and simple to make.
Ingredients:
  • 125ml olive oil
  • 62.50 ml chopped dill
  • 1 small shallot, finely chopped
  • 1 lemon, zested, juiced
  • 3 Skinless Salmon Portions
  • 8 slices by Laurent White Sourdough Vienna*
  • 20g mixed salad leaves
Instructions:
  • Preheat a chargrill to medium-high heat. Combine 1/3 cup (80ml) oil with dill, shallot, and lemon zest in a bowl. Use 1 tablespoon of the dill mixture to coat the salmon. Season with salt and pepper.
  • Grill the salmon for 2 1/2 minutes on each side until char marks form and the center remains rosy. Flake the salmon into pieces.
  • Drizzle the bread with the remaining oil and grill for about 2 minutes on each side until char marks appear.
  • Lay salmon pieces on top of the bread with the salad leaves. Combine remaining dill mixture with 1 tablespoon of lemon juice. Season with salt, pepper, and more lemon juice to taste. Pour the dill-lemon sauce over the bruschetta and enjoy.
