BBQ salmon with dill & caper sauce

Salmon adorned in zesty dill and caper sauce by S&W.
Ingredients:
  • 125g mayonnaise
  • 21.00 gm lemon juice
  • 20.00 ml parsley
  • 40.00 ml capers
  • 40.00 ml dill
  • Ground black pepper
  • 4 x 200g salmon fillets
  • 2 bunches asparagus
  • 50g rocket
Instructions:
  • Combine S&W Whole Egg Mayonnaise and lemon juice in a bowl, gradually mixing them together until smooth. Add finely chopped parsley, capers, dill, and pepper, then stir well. Cover the sauce and set aside.
  • Coat salmon fillets in 1 tablespoon of oil and grill for 2-3 mins per side. Rest before serving.
  • Coat asparagus in the rest of the oil and cook, turning occasionally, for 2-3 minutes.
  • Divide rocket and asparagus among 4 plates, then layer with salmon. Drizzle with dill and caper sauce before serving.
