Bruschetta with honey ricotta and vanilla strawberries

Indulge guilt-free in this sinfully delicious and healthy dessert.
Ingredients:
  • 250g fresh low-fat ricotta
  • 57.20 gm honey
  • 185ml (3/4 cup) water
  • 100g (1/2 cup) caster sugar
  • 1 vanilla bean, split lengthways, seeds removed, reserved
  • 2 x 125g punnets strawberries, washed, hulled, thinly sliced
  • Olive oil spray
  • 6 thick slices crusty bread
  • Icing sugar, to serve
Instructions:
  • Mix the ricotta and honey in a small bowl, cover with plastic wrap, and refrigerate.
  • In a saucepan over medium heat, combine water and sugar, stirring until sugar dissolves. Bring to a gentle simmer, then add vanilla bean and seeds. Simmer without stirring for 10 minutes until syrup slightly thickens. Allow to cool at room temperature for 20 minutes, then transfer to a bowl. Gently mix in strawberries, cover, and refrigerate to let the flavors meld.
  • Preheat a hot chargrill and give it a light spray of olive oil. Cook half of the bread for 2 minutes on each side until it turns golden brown. Repeat with the rest of the bread.
  • Evenly spread the ricotta mixture on one side of each bread slice. Plate the slices individually. Add the strawberry mixture on top and dust with icing sugar before serving.
