Quick and easy Italian bruschetta with fresh mozzarella and tomatoes - a flavorful appetizer.
Ingredients:
  • 1-1/2 cups halved grape tomatoes, well drained
  • 4 ounces fresh mozzarella cheese, cut into 1/4-inch cubes
  • 2 tablespoons thinly sliced fresh basil leaves
  • 2 cloves garlic, pressed
  • 1 1/2 tablespoons olive oil, divided
  • 1/2 tablespoon balsamic vinegar
  • salt and freshly ground black pepper to taste
  • 8 (1/2-inch thick) diagonal slices baguette
  • salt to taste
  • fresh basil leaves for garnish (optional)
Instructions:
  • Combine tomatoes, mozzarella, fresh basil, garlic, 1 tablespoon of olive oil, and balsamic vinegar in a bowl. Mix gently until everything is well blended. Season with salt and pepper to your liking. Keep aside.
  • Preheat the broiler with an oven rack positioned 6 inches from the heat source. Lightly brush baguette slices with remaining olive oil and arrange in a single layer on a baking sheet. Season with salt and broil for about 1 minute until lightly browned, being careful not to burn.
  • Before serving, generously heap the tomato mixture onto the freshly toasted baguette and top it off with a vibrant sprinkle of fresh basil leaves.
