Whip up a quick and tasty bruschetta with organic tomatoes, fresh mozzarella, and basil on baguette slices. Ready in under 30 minutes!
Ingredients:
  • 24 slices (1/2 inch thick) baguette (about 8 oz)
  • 1 to 2 tablespoons olive oil
  • 2 large cloves garlic
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
  • 3/4 cup diced fresh mozzarella cheese
  • 2 tablespoons chopped fresh basil leaves
  • 1/4 teaspoon coarse (kosher or sea) salt
  • 1/4 teaspoon pepper
Instructions:
  • Preheat oven to 425°F. Arrange bread slices on an ungreased cookie sheet and brush with oil. Bake for 4 to 5 minutes, or until lightly golden brown. Allow to cool for 5 minutes before serving.
  • Combine all other ingredients, excluding garlic, while you wait.
  • Cut garlic cloves in half and use them to infuse the toasted bread slices with flavor by rubbing the cut sides over them. Top the garlic-infused bread slices with the mixture and savor the dish while it's hot.
