Garlic crostini with tomato, caper and olive salsa

Try our mouthwatering garlic loaf with zesty salsa - the perfect starter for any event!
Ingredients:
  • 36.40 gm olive oil
  • 1 garlic clove, crushed
  • 20cm-long bread roll
  • 2 ripe tomatoes, finely chopped
  • 20.00 ml finely chopped kalamata olives
  • 20.00 ml drained capers, finely chopped
  • 20.00 ml chopped fresh continental parsley
  • 9.20 gm extra virgin olive oil
  • Salt & freshly ground black pepper
Instructions:
  • Preheat oven to 200°C while combining oil and garlic in a small bowl. Let it sit for 5 minutes to enhance the flavors.
  • With a serrated knife, trim the ends off the bread roll and then slice it into 12 evenly cut pieces, each about 7mm thick.
  • Gently coat the bread slices on both sides with the oil mixture using a pastry brush. Bake on a tray in a preheated oven for 8 minutes until they are crisp and golden. Transfer to a wire rack to cool for 10 minutes after removing from the oven.
  • Prepare the tomato, caper & olive salsa by combining tomatoes, olives, capers, parsley, and oil in a bowl. Mix well and season with salt and pepper to taste.
  • Top each crostini with a dollop of salsa and serve right away.
