Whip up a quick and tasty Italian bruschetta in 25 minutes with ripe tomatoes, garlic, melted cheese, and fresh basil on crispy French bread.
Ingredients:
  • 32 slices French bread, 1/4 inch thick
  • 1/4 cup olive or vegetable oil
  • 3 roma (plum) tomatoes, diced (2 cups)
  • 3 cloves garlic, finely chopped
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh basil leaves
  • 1/2 teaspoon salt
Instructions:
  • Preheat the oven to 425°F. Place bread on an ungreased cookie sheet and brush with 2 tablespoons of oil. Bake for 4 to 5 minutes until lightly golden brown.
  • Combine juicy tomatoes, the remaining 2 tablespoons of luscious oil, aromatic garlic, savory cheese, fresh basil, and a pinch of salt. Spoon approximately 1 tablespoon of the flavorful tomato mixture onto each warm slice of bread.
