Tomato basil pasta with spinach, garlic, and creamy brie
Ingredients:
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 pound chopped fresh, ripe tomatoes (about 2 medium tomatoes)
  • 6 ounces brie cheese, rind removed, cheese cut into small chunks
  • Zest and juice of one lemon (about 1 teaspoon zest and 3 Tbsp juice)
  • A handful of basil leaves, chiffonade or sliced thin
  • 5 ounces baby spinach, rinsed, patted dry
  • 1/2 to 3/4 pound of linguine or fettuccine pasta
  • 1/2 cup grated Parmesan
  • Salt and pepper taste
Instructions:
  • Prepare the pasta: Bring a large pot of water to a boil, adding 1 tablespoon of salt for every 2 quarts of water. Meanwhile, prepare the ingredients. Add the pasta to the boiling water and cook until al dente (firm to the bite).
  • In a large microwave-safe bowl, combine garlic, olive oil, chopped tomatoes, brie (rind removed), lemon zest, and lemon juice. Microwave for 2-3 minutes until the brie is melty. Alternatively, if not using a microwave, let the ingredients sit for 1-2 hours to soften the brie.
  • Combine cooked pasta with ripe tomatoes, rich brie, fresh spinach, and aromatic basil: Drain the pasta, mix it in a bowl with the tomatoes and brie. Add the spinach and basil as well. Toss everything together ensuring an even distribution of the spinach, basil, cheese, and tomatoes. Crush any large pieces of cheese if necessary.
  • Enhance with freshly grated Parmesan and ground black pepper, toss to mix well. Season with more salt to taste.
