Easy and economical Mediterranean chicken dish with tomato-basil sauce, mushrooms, and spinach. Versatile - swap veggies and pair with rice, pasta, mashed potatoes, or crusty bread. Perfect for entertaining or buffets.
Ingredients:
  • 8 chicken drumsticks
  • 500g btl tomato and basil pasta sauce
  • 2 tsp chicken stock powder
  • 200g button mushrooms, halved
  • 200g (1 cup) long grain rice
  • 60g baby spinach
Instructions:
  • Preheat oven to 200°C/180°C fan forced. Heat oil in a large frying pan over medium-high heat. Cook chicken in 2 batches, turning occasionally, for about 5 minutes until golden brown. Transfer to a plate.
  • First, pour the pasta sauce into the ovenproof dish. Then, dissolve the stock powder in water and mix it into the sauce. Add the mushrooms followed by the chicken. Finally, bake for 40 minutes.
  • Simmer the rice in a generous amount of boiling water for 10 minutes or until perfectly tender, then drain thoroughly.
  • Sprinkle the fresh spinach over the savory chicken. Pop it in the oven for 5 minutes or until the spinach gently wilts. Blend the spinach into the rich sauce for an even more flavorful dish.
  • Plate the chicken with the sauce on a bed of fluffy rice.
