Melted mozzarella on a crispy English muffin with juicy tomatoes and salty olives.
Ingredients:
  • 4 English muffins, split
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh basil
  • 4 large fresh tomatoes, peeled and chopped
  • 8 black olives, pitted and halved
  • 1 tablespoon tomato paste
  • 2 teaspoons lemon juice
  • 1 teaspoon honey
  • 4 slices mozzarella cheese, halved
Instructions:
  • Preheat the broiler and position the rack 6 inches below the heat source. Toast muffin halves until golden, about 2 to 3 minutes. Combine garlic, butter, and basil in a small bowl, then spread the mixture evenly on each muffin half.
  • In a big bowl, mix together tomatoes, olives, and tomato paste; set aside. In a small bowl, whisk olive oil, lemon juice, and honey. Spread tomato mixture over each muffin, drizzle olive oil mixture on top, place mozzarella, and season with salt and pepper.
  • Place the muffins back under the broiler until the cheese is gooey and melted, which should take about 1 to 2 minutes. Serve right away for the best flavor and experience.
