Traditional Italian bruschetta with a topping of fresh tomato, basil, and creamy mozzarella on crusty bread slices.
Ingredients:
  • 6 roma (plum) tomatoes, chopped
  • 0.5 cup sun-dried tomatoes, packed in oil
  • 3 cloves minced garlic
  • 0.25 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 0.25 cup fresh basil, stems removed
  • 0.25 teaspoon salt
  • 1 French baguette
  • 2 cups shredded mozzarella cheese
Instructions:
  • Preheat the oven using the broiler setting.
  • In a large bowl, mix together the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Let it marinate for 10 minutes.
  • Slice the baguette into 3/4-inch pieces. Arrange the slices in a single layer on a baking sheet and broil for 1 to 2 minutes until lightly browned.
  • Evenly spread the flavorful tomato mixture on the baguette slices and generously top them with fresh mozzarella cheese.
  • Broil until the cheese is gooey and bubbly, about 5 minutes.
