Penne with Spicy Sauce

Elevate pasta with quick homemade double tomato sauce in 30 minutes!
Ingredients:
  • 1 package (16 oz) penne pasta
  • 1 can (28 oz) Italian-style peeled whole tomatoes, undrained
  • 2 tablespoons olive or vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon tomato paste (from 6-oz can)
  • 1/2 cup freshly grated or shredded Parmesan cheese
Instructions:
  • Cook the pasta per package instructions, and while it's cooking, place tomatoes with their juice in a food processor or blender. Blend until coarsely chopped.
  • In a large skillet, heat oil over medium-high heat. Sauté garlic, red pepper flakes, and parsley for 5 minutes until garlic starts to turn golden. Add chopped tomatoes and tomato paste. Bring to a boil, then reduce heat, cover, and simmer for about 10 minutes until slightly thickened, stirring occasionally.
  • Combine pasta and a generous amount of 1/4 cup cheese into the skillet. Cook for approximately 3 minutes, gently tossing until the pasta is fully coated. Sprinkle the remaining 1/4 cup cheese on top. Enjoy!
