Spicy Cajun chicken gluten-free penne with creamy sauce, red peppers, mushrooms, and onions.
Ingredients:
  • 1 (12 ounce) box Barilla Gluten Free Penne
  • 4 tablespoons extra-virgin olive oil
  • 4 boneless, skinless chicken thighs
  • 1 Vidalia onion, cut julienne style
  • 1 red bell pepper, cut julienne style
  • 6 domestic mushrooms, quartered
  • 3 cloves garlic, chopped
  • 1 tablespoon Cajun seasoning
  • 0.5 cup dry white wine
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • Salt and black pepper to taste
Instructions:
  • Boil a large pot of water.
  • In a sizzling skillet, sear the chicken in flavorful olive oil on high heat for about 5 minutes. Toss in onion, bell pepper, mushrooms, garlic, and Cajun seasoning, and saute for an extra 3 minutes. Pour in the wine, then season with salt and pepper; let the liquid reduce by half.
  • Stir in cream and bring to a gentle simmer.
  • Simmer pasta in boiling water until al dente.
  • Toss drained pasta with sauce, then stir in the cheese before serving.
