Healthier bruschetta with low-fat cheese, whole grain bread, sun-dried tomatoes, balsamic vinegar, and basil for a flavorful twist.
Ingredients:
  • 1 loaf whole grain artisan bread, cut into 3/4-inch slices
  • 6 roma (plum) tomatoes, chopped
  • 0.5 cup ready-to-eat sun-dried tomatoes, chopped
  • 3 cloves minced garlic
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 0.25 cup fresh basil, stems removed and leaves chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup shredded part-skim mozzarella cheese
Instructions:
  • Preheat oven to broil. Place artisan bread slices in a single layer on a baking sheet.
  • In a large bowl, toss together the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Let it marinate for 10 minutes.
  • Broil the bread until it's beautifully golden, about 1 to 2 minutes.
  • Spread the tomato mixture evenly on the bread slices and finish with a generous layer of melted mozzarella cheese.
  • Place the baking sheet back in the oven and broil until the cheese is perfectly melted, which should take about 1 to 2 minutes.
