Caprese bruschetta salad

Traditional bruschetta with tomato, mozzarella, and basil for a classic, flavorful appetizer.
Ingredients:
  • 400g ciabatta loaf
  • 4 ripe tomatoes, sliced
  • 400g cherry tomatoes, halved
  • 18.20 gm extra virgin olive oil
  • 40.00 ml balsamic vinegar
  • 125.00 ml torn fresh basil leaves
  • 2 x 110g tubs buffalo mozzarella, drained, torn
Instructions:
  • 1. Preheat the grill to high heat. 2. Trim and discard the ends of the bread, then slice it into 1.5cm thick slices. 3. Place the bread slices on a baking tray and grill until golden on both sides. 4. Arrange the golden bread slices in a single layer on a large serving plate.
  • In a large bowl, combine tomatoes, oil, vinegar, and half of the basil. Season with salt and pepper, then toss to coat. Spread half of the tomato mixture over the bread and layer with half of the mozzarella. Repeat the layers with the remaining tomato mixture and mozzarella. Sprinkle with the remaining basil and additional pepper. Cover and refrigerate for 1 hour to let the flavors meld and the bread absorb the dressing.
  • Allow the salad to come to room temperature for 15 minutes before serving. Serve.
