Caprese salad: Tomatoes, garlic, basil, balsamic, and gooey melted mozzarella. A classic and elegant appetizer.
Ingredients:
  • 2 large tomatoes, diced
  • 0.5 cup finely chopped red bell pepper
  • 0.25 cup finely chopped red onion
  • 0.25 cup balsamic vinegar
  • 0.25 cup olive oil
  • 10 leaves fresh basil, chopped
  • 1 (1 pound) loaf French bread, cut into 1/4-inch slices
  • 0.25 cup shredded mozzarella cheese
Instructions:
  • Mix together juicy tomatoes, crisp bell pepper, fragrant onion, tangy balsamic vinegar, a quarter cup of rich olive oil, fresh basil, and pungent garlic; allow the vibrant tomato mixture to marinate for 15 to 30 minutes.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Place French bread slices elegantly on a spacious baking sheet and generously drizzle with 1/4 cup of flavorful olive oil.
  • Toast bread in a preheated oven until lightly browned on each side, about 1 minute. Top the slices with tomato mixture using a slotted spoon to drain excess liquid. Sprinkle with mozzarella cheese and return to baking sheet.
  • Place the dish under the broiler in the oven until the cheese is perfectly melted, which should take around 3 minutes. Serve right away for the best experience.
