Try this delectable tomato bruschetta with basil and cheese - a delightful Italian-inspired roasted appetizer.
Ingredients:
  • 14 slices (1/2 inch thick) baguette
  • 1/4 cup olive oil
  • 2 cups grape tomatoes
  • 2 shallots, sliced, separated into rings
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons shredded fresh basil leaves
  • 1/2 cup shaved Parmesan cheese
  • Additional fresh basil leaves
Instructions:
  • Preheat oven to 425°F. Arrange baguette slices on a baking sheet without greasing it; lightly brush the slices with 2 tablespoons of oil. Bake for about 6 minutes until they are nicely toasted. Remove from oven and keep aside.
  • Combine tomatoes and shallots in a 15x10x1-inch pan. In a small bowl, whisk together 2 tablespoons of oil, vinegar, salt, and pepper. Pour the mixture over the tomatoes and shallots, gently toss them, and bake for 25 minutes until the tomatoes burst and start to break down. Allow to cool for 5 minutes before serving.
  • Combine the tomato mixture and shredded basil in a medium bowl, gently mashing the tomatoes. Spoon the mixture onto toasted baguette slices and garnish with basil leaves and cheese.
