Quick and easy recipe bursting with flavor, featuring Muir Glen organic fire-roasted diced tomatoes.
Ingredients:
  • 12 slices (1/2 inch thick) Italian bread
  • 1/4 cup olive oil
  • 2 cloves garlic, skins removed
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
  • 1/4 teaspoon freshly ground pepper
  • 1/4 cup shredded Cheddar cheese or Italian cheese blend
  • 1 tablespoon grated lemon peel
Instructions:
  • Preheat oven to 375°F.
  • Lay the bread slices on a cookie sheet. Generously drizzle each slice of bread with 1 teaspoon of flavorful olive oil.
  • Bake until perfectly golden brown for 6 to 8 minutes.
  • Once warm, delicately massage peeled garlic onto each slice of bread before placing them back on the baking sheet.
  • Combine drained tomatoes with a pinch of salt and pepper in a bowl. Spread the tomato mixture on bread slices and sprinkle with cheese.
  • Bake for a couple of minutes until the cheese is gooey and melted. Serve warm with a sprinkling of fragrant lemon peel on top.
