Smoky tomato, basil and pancetta bruschetta

Savory pancetta bruschetta, ready in 20 minutes!
Ingredients:
  • 8 slices seeded sourdough bread
  • Olive oil spray
  • 200g Gourmet Selection Pancetta
  • 250g punnet cherry tomatoes, quartered
  • 1 clove garlic, crushed
  • 2 tsp balsamic vinegar
  • 82.50 ml small fresh basil leaves
  • 1 small red onion, halved, finely sliced (in half circles)
Instructions:
  • Heat up the barbecue grill plate. Gently coat the sourdough slices with oil spray. Grill on high heat for 2-3 minutes per side until they are lightly charred and infused with a smoky flavor. Take them off the grill and set aside.
  • Grill pancetta slices until crispy and smoky. Remove and place on a tray.
  • Mix together tomatoes, garlic, vinegar, oil, basil, and onion in a medium bowl. Season with salt and pepper. Serve by topping bread slices with crispy torn pancetta and spooning the tomato mixture over the top.
