Mexican BLT Quesadilla: Choose smoky or zesty with diced tomatoes. Crispy bacon and fresh basil elevate this classic dish. Perfect for parties or a quick snack.
Ingredients:
  • 8 (8 inch) flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 (10 ounce) can RED GOLD® Petite Diced Tomatoes with Chipotle
  • 8 slices bacon, cooked and crumbled
  • 0.5 cup chopped fresh basil
  • Sour cream
Instructions:
  • Sprinkle 1/4 cup of cheese and 2 tablespoons of diced tomatoes on each tortilla. Add 1 tablespoon of bacon and 1 tablespoon of basil on top. Fold the tortillas in half to create a half-circle shape.
  • Drizzle a touch of oil onto a sizable nonstick skillet or griddle. Cook each quesadilla over medium-high heat for 1 1/2 minutes on both sides until the cheese is gooey and the tortilla is slightly crispy.
  • Create 4 appetizing wedges from the quesadilla and accompany with a dollop of sour cream.
