Elevate the BLT with a French twist - try a delicious bacon and tomato tarte Tatin with a side of crisp cos salad.
Ingredients:
  • 250g mixed baby tomatoes, halved
  • 8 streaky bacon rashers
  • 1 sheet frozen butter puff pastry, thawed
  • 1 egg, lightly beaten
  • 100g aioli
  • 1/2 lemon, juiced and finely zested
  • 5.90 gm Dijon mustard
  • 1 baby cos lettuce, leaves separated
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to 200C and generously grease a 23cm square baking dish.
  • Remove seeds and excess liquid from tomatoes by squeezing them, then discard. Place the tomato and bacon evenly on the bottom of the baking dish.
  • Season and bake until bacon is slightly crispy for 10-12 minutes. Top with puff pastry, tuck in edges, brush with egg wash, and bake for 20 minutes until golden and puffed. Rest for 5 minutes before serving.
  • Combine aioli, fresh lemon zest and juice, and tangy mustard in a bowl. Gently invert tart onto a serving plate, then garnish with crisp lettuce and fragrant parsley. Serve with a side of zesty lemon aioli.
