Tomato bruschetta: diced tomatoes marinated with basil and garlic served on crispy toast for a delicious Italian starter.
Ingredients:
  • 1.5 pounds plum tomatoes, seeded and cut into small dice
  • 0.25 cup chopped fresh basil
  • 6 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons finely chopped red onion
  • 2 large cloves garlic, minced
  • 2 teaspoons red wine vinegar
  • freshly ground black pepper to taste
  • 1 French baguette, cut into 1/2-inch thick slices
  • 1 tablespoon high-quality balsamic vinegar, or to taste
Instructions:
  • Combine tomatoes, basil, olive oil, red onion, garlic, red wine vinegar, and pepper in a bowl. Allow the mixture to sit at room temperature for 15 minutes, then refrigerate for 45 minutes to marinate.
  • Position the oven rack 6 inches below the broiler and preheat the broiler.
  • Brush each slice of bread with the remaining olive oil, ensuring they are oiled-side-up on a baking sheet.
  • Broil for 2 minutes until beautifully golden; then, remove from oven. Spread tomato mixture evenly on top of toasted bread; drizzle with balsamic vinegar. Serve promptly for the best taste.
