Bruschetta with Roasted Sweet Red Peppers

Vibrant roasted red pepper bruschetta - a crowd-pleasing appetizer sure to disappear quickly, with endless compliments.
Ingredients:
  • 16 ounces Italian bread
  • 2 tablespoons olive oil
  • 1 (16 ounce) jar marinated roasted sweet red peppers
  • 3 cloves garlic, chopped
  • 1 tomato, seeded and chopped
  • 1 cup chopped fresh basil
  • 3 teaspoons balsamic vinegar
Instructions:
  • Heat up your oven's broiler.
  • Cut the bread loaf into 1-inch thick slices. Brush one side of each slice with olive oil and broil with the oiled side up until lightly golden. Remove from the broiler pan and allow to cool.
  • Combine roasted pepper, garlic, tomato, basil, and onion in a bowl. Spread mixture evenly on toast. Finish with a drizzle of balsamic vinegar. Serve right away.
