Whip up a flavorful red lentil soup with tomatoes, spinach, onions, and spices on the stove, then blend for an effortless and delicious meal.
Ingredients:
  • 1 teaspoon olive oil
  • 1.5 cups chopped red onion
  • salt and pepper to taste
  • 1 (28 ounce) can diced tomatoes
  • 2 cups dry red lentils
  • 1.5 cups frozen chopped spinach
  • 2 cups water
  • 2 teaspoons dried basil
  • 1.5 teaspoons ground cardamom
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cayenne pepper
  • 0.5 teaspoon curry powder
Instructions:
  • In a large pot over medium heat, sauté onions in olive oil until golden brown. Season with salt and pepper. Add tomatoes, lentils, and spinach, then pour in water. Stir in basil, cardamom, cumin, cayenne pepper, and curry powder. Bring to a boil, then simmer on low for 25 minutes or until lentils are tender, stirring occasionally.
  • Blend the soup until smooth before serving.
