Experience the birth of bubble tea in Taiwan during the 1980s when tapioca shaved ice met a cup of milky tea, creating the beloved boba tea. This trending drink combines black tea, sugar syrup, milk, ice, and tapioca balls. Sip through a wide straw to enjoy the caramelly pearls at the bottom.
Ingredients:
  • 2 tea bags
  • 250ml (1 cup) boiling water
  • 55g (1/3 cup) tapioca pearls (black sugar flavour)
  • 45g (1/4 cup, firmly packed) brown sugar
  • 250ml (1 cup) milk
  • I/500.00 ml ice cubes
Instructions:
  • Combine the tea bags and boiling water in a heatproof jug and let them steep for 5 minutes. Remove and discard the tea bags, then chill the tea in the freezer until cool.
  • Bring a saucepan of water to a boil. Add tapioca pearls and cook for 5 minutes until tender, stirring occasionally. Drain and rinse with cold water.
  • In a saucepan, combine brown sugar and 2 tablespoons of water over high heat, stirring until sugar dissolves. Let it simmer for 2 minutes, then stir in the pearls and remove from heat.
  • Combine tea, milk, and ice in a cocktail shaker and shake well.
  • Split the pearls between two glasses. Pour the milk mixture over them and generously drizzle with any leftover sugar syrup. Enjoy with a sturdy straw or a spoon.
