Bubblegum rainbow cake

Vibrant and joyful cake to delight all.
Ingredients:
  • 375g unsalted butter, softened
  • 13.20 gm vanilla extract
  • 537.50 gm caster sugar
  • 4 eggs
  • 675.00 gm self-raising flour
  • 386.25 gm milk
  • Blue, purple, green, pink and yellow gel food colourings
  • 30.00 ml banana-flavoured Nesquik powder (optional, see note)
  • 2 tsp strawberry essence (optional, see note)
  • M&Ms (7 red, 18 orange, 24 yellow, 28 green and 36 blue), to decorate
  • 12 pink and 40 purple Smarties, to decorate
  • 500g unsalted butter, softened
  • 900.00 gm icing sugar mixture
  • 8.80 gm vanilla extract
  • White icing colouring (optional)
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease and line two 7cm-deep, 20cm-round cake pans with 2 layers of baking paper.
  • Cream together butter, vanilla, and sugar with an electric mixer until fluffy. Mix in eggs one at a time, ensuring each addition is fully incorporated. Slowly incorporate flour on low speed, alternating with milk until just mixed. Divide the batter evenly among 5 bowls. Color one bowl purple, then color the rest blue, green, pink, and yellow using food coloring. Stir in banana-flavored powder to the yellow batter and strawberry essence to the pink batter, mixing well.
  • Pour alternating spoonfuls of each colored mixture into a prepared cake pan, using half of each mixture. Use a butter knife to gently create a marbled effect by dragging it through both mixtures. Bake both cakes together for 1 hour or until a skewer comes out clean. Let them rest in the pans for 10 minutes before cooling on a wire rack.
  • Beat butter with an electric mixer for 5 minutes until light and fluffy. Gradually mix in icing sugar until pale and fluffy. Stir in vanilla and beat until combined. Add white coloring, if desired, to achieve a white icing.
  • Level the cakes with a serrated knife if needed. Put one cake on a serving plate and spread 3/4 cup of icing on top. Place the second cake on top and cover the top and sides with the rest of the icing. Refer to the picture for decoration with M&Ms and Smarties. Use the remaining colors along the base row. Serve.
